Whole30: Turkey Stuffed Peppers

Last week, I attempted a Whole30 recipe that has become one of my favorites!

Turkey Stuffed Peppers
Whole30/ Paleo Approved

Shopping List:
  • 6-8 bell peppers (choose a variety of colors)
  • 1.5-2lbs of ground turkey
  • 1 large onion
  • 1 clove of garlic
  • 1 can of diced tomatoes with green chiles
  • 1 jar of spaghetti or marinara sauce (sugar-free) or a 14 oz. can of tomato sauce
  • 1 tbsp of Italian seasoning
  • salt and pepper

Instructions:
I tried cooking my bell peppers two different ways. I put half in a pot of boiling water on the stove and I put half in the microwave in a bowl with water. I preferred the microwave way over the stove way. I thought the microwave did a quicker job of softening the peppers. Choose whichever way works for you!
  1. Place peppers in a pot of boiling water on the stove or place peppers in a bowl with a little bit of water (I added just enough water to cover the bottom of the peppers). Cook for 8-12 minutes. The microwave cooked my peppers in about 8 minutes, the stove for about 12 minutes. Check frequently to ensure your peppers don’t get too soft. I checked my peppers in the microwave around minute 6 and then let them cook for another 2 minutes. The peppers on the stove I kept squeezing the tops of them with my fingers until I thought they felt soft enough.
  2. Chop your onions and garlic.
  3. Brown the ground turkey and add your chopped onions and garlic to the pan.
  4. Strain the excess juice from your meat when you're finished and return the cooked ground turkey mixture back to the pan.
  5. Add in 1 can of diced tomatoes, 1 cup of spaghetti/marinara/or tomato sauce, 1 tbsp of Italian seasoning, and salt and pepper to taste. Let it sit on a low heat for a few minutes and occasionally stir.
  6. Fill peppers with turkey mixture and enjoy!

Optional: Top off the peppers with any remaining sauce.

  1. I love stuffed peppers! I actually did some similar to this last week. Of course I didn't document it well enough to blog about it though. Dang! Added one of my older recipes to the link up, hopefully I'll have something new to add next week!

  2. We make stuffed bell peppers all the time because they're just so easy and delicious! Sometimes (AKA all the time) when we're feeling really lazy, we'll just dice up the bell peppers and toss them into the turkey or beef or whatever we're using as the stuffing. It makes it easier to eat as leftovers and tastes just as good!
